• 1 bunch dinosaur (Lacinato, Tuscan) kale, sliced into thin ribbons
  • 1 persimmon, sliced into thin quarters
  • 1 small watermelon radish, julienned
  • 1 apple, julienned
  • 1 avocado, cubed
  • Preserved Lemon Vinaigrette (*Or other lemony, tangy vinaigrette)

Massage vinaigrette into kale ribbons and let marinate for 10-15 minutes. Toss with remaining ingredients and serve.

NOTE: Kale keeps well dressed with vinaigrette (and gets even better with a bit of marinating time) so you can even prep the kale a few hours ahead and top with remaining ingredients when ready to serve.
