Chia Seed Oatmeal

INGREDIENTS:

  • 1/2 cup old fashioned oats
  • 1 cup unsweetened almond milk 
  • 1/2 tsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 tbsp chia seeds
  • 1 banana
  • Handful of blueberries

DIRECTIONS:

  1. Mix the oats and almond milk in a microwave safe bowl, cook for 2-3 minutes on high – or cook on the stovetop according to the directions on the package. 
  2. Mix in maple syrup and chia seeds, let sit for 2 minutes to activate chia and cool slightly. Stir well, and top with sliced banana + handful of blueberries. 

OVERNIGHT OATS: Mix oatmeal, chia, almond milk, vanilla and maple syrup in an airtight jar. Let sit for 5 minutes, mix again once chia is activated to prevent clumping. Cover the container and place in the fridge overnight, in the morning add the banana and blueberries and serve. 

*Substitute the milk you prefer (or use water), swap the maple syrup for agave, honey or brown sugar. And use whatever fruits/toppings you like.
