SUMMER TOMATO SALAD

VIBES: Freeway “WHAT WE DO”

This simple salad is best served in the summer when Tomatoes are in peak season.

INGREDIENTS: 

  • 3 Small Tomatoes – quartered
  • 1/4 Purple Onion -sliced thin
  • 1 Avocado- diced
  • 1/2 English Cucumber – cubed
  • 1/4 Cup Mixed Herbs- chopped (Basil, Chives, Parsley, Cilantro)
  • Kosher Salt
  • A sprinkle of Feta Cheese, Red Wine Vinegar + Olive Oil

DIRECTIONS:

Place Tomato, Onion, Avocado, Herbs and Cucumber in a bowl. Salt and mix, sprinkle with a bit of olive oil and dash red wine vinegar, toss to coat. Top with a dash of feta cheese and serve.
