VIBES: Talking Heads “This must be the place”

INGREDIENTS:

  • 3 Eggs
  • 1 tsp olive oil
  • handful of thinly sliced kale
  • 1/4 cup chopped red, yellow or green peppers
  • 1/4 cup chopped onion
  • a handful of mixed herbs, (I used chives and parsley) chopped fine – divided in half
  • 1/4 cup shredded cheddar – divided in half
  • 1/2 avocado, cubed
  • salt and pepper to taste

DIRECTIONS:

Crack eggs and whisk to scramble well. Heat tsp of olive oil in a pan over medium, add kale, peppers and onions, half the herbs, and season with salt and pepper. Saute until veggies are softened and onions are translucent. Reduce heat to medium low and add eggs and 1/2 the cheese. Cook the mixture, mixing constantly with a rubber spatula until just set. Remove from pan and top with the additional fresh herbs, cheddar, and cubed avocado.
